These Choc Almond Muffins are soft and moist on the inside with a surprising biscuity crunch on the top.

Ingredients

  • ½ cup Almond Flour
  • ¼ cup Coconut Flour
  • 1 tbsp Coconut Sugar
  • 1 tsp Baking Soda
  • 2 tsp Baking Powder
  • 2 scoops VPA Chocolate WPI
  • ¼ cup Coconut Oil
  • ½ cup Almond Butter
  • 2 large Eggs
Toppings-
  • 2-3 tbsp Almonds (chopped)
  • 2-3 tbsp 80% Dark Chocolate

Method

  1. Preheat oven to 180º and line a 9 hole muffin tray.
  2. In a food processor combine all muffin ingredients.
  3. Spoon mixture into line muffin tray and top with chopped almonds and dark chocolate.
  4. Bake for 20 minutes.
