Happy Pistachio Day! (Feb 26th) Easy, healthy and so delicious, these Pistachio Protein Balls are super low-carb and packed with 6 grams of protein per serve. With lemon, coconut and added multi greens these protein balls are light and zesty and are sure to be your jam.

(Keto, Lo-Carb, No Added Sugar, Peanut Free)

Ingredients

  • 120g Coconut
  • 120g Pistachios
  • 1 Lemon (juice & zest)
  • 2 tbsp. Coconut Oil
  • 3 scoops Vanilla WPI
  • 1 tbsp. Maple Syrup
  • 2 tsp Multi Greens
  • 1-2 tbsp. Water

Method

  1. Finely grate and juice one Lemon.
  2. In a food processer combine all ingredients, slowly adding the water until mixture comes together.
  3. Take about 2 tbsp. of the mixture and roll into a ball between your hands. Repeat.
  4. Chill and Enjoy.
