Blend the oats, coconut and protein in a blender or food processor until it forms a flour and starts to clump together.
Tip into a bowl and add the peanut butter, coconut oil and vanilla. Mix until well combined.
Press the mixture out evenly into the lined dish and place in fridge.
Meanwhile, melt the chocolate in the microwave or using a double boiler. Add the peanut butter and stir until smooth.
Pour topping over the base and set in the fridge for 30mins or until set.
Store in the fridge for up to 7 days or freeze for up to 3 months.
