These decadent Chocolate Protein Donuts with Strawberry & Cream Frosting will be sure to make your heart skip a "beet". With the subtle beet tones and the rich chocolatey goodness of cacao & chocolate protein powder it really is a match made in heaven. To finish these donuts nicely is a smooth strawberry’s & cream frosting made with coconut cream and strawberry flavours. These charming creations are made with VPA’s Premium Plant Protein Powder - Chocolate (donuts) & Strawberry (frosting) and Beet-500 Beetroot Powder.
2 cups/200g almond flour
1/4 cup + 1 tbsp/45g cacao
1/4 cup/30g chocolate plant-based protein powder
2 tsp/8g baking powder
2 tsp/8g beet powder
pinch of salt
2 ripebanana (200gapprox), mashed
1/4 cup/75g apple sauce
2 tbsp/50g cashew butter
2 tbsp/30g coconut sugar
1/3 cup/80ml dairy-free milk like almond or oat
1 tbsp vanilla essence
Preheat oven to 180ºC/350ºF.
In a large bowl sift together the dry ingredients - almond flour, cacao, plant-based protein powder, baking powder, beet powder & pinch of salt.
In a separate bowl mix together the wet ingredients - mashed bananas, apple sauce, cashew butter, coconut sugar, dairy-free milk & vanilla essence.
Slowly add the flour mixture until combined. Use low setting if using a stand or electric mixer.
Spoon evenly into donut moulds (I use silicon) or a lined square tin.
Bake for 30 minutes or until toothpick comes out clean.
Remove from oven and allow to cool before removing from moulds.
Frosting: Mix 1/2 can coconut cream, 1 tbsp strawberry plant-protein powder, 1 tsp strawb'ry & cream flavouring, 1/2 tsp beet powder, 1/2 tbsp maple syrup until light & fluffy. Use water from coconut cream to thin out until desired consistency. Decorate sprinkles, chocolate drizzle etc.
