Make your partner's heart "beet" faster this Valentine's day by spoiling them with this no-bake Cherry-Ripe Brownie Bites, made with a chocolate brownie base, juicy cherry coconut filling & dark chocolate coating. These sweetheart’s are made with VPA® Premium Plant Chocolate Protein Powder & Beet-500 Beetroot Powder.

Ingredients
1 cup/120g almond flour
1 tbsp/10g cacao

1 tbsp/12g chocolate plant-based protein powder
20g dates (approx 5)
1 tbsp/30g cashew butter

1 tsp/5g beet powder
1 1/2 cups/225g pitted cherries frozen or fresh
2 cups/160g desiccated coconut
2 tbsp/40ml maple syrup
2 tbsp/55g coconut cream

1 tsp/5g beet powder
150g dark chocolate
Directions
Chop & soak the dates in boiling water for 10 minutes, keeping the water when finished.
In a large bowl or food processor combine the dates, 2 tbsp of date water and the rest of ingredients for the brownie base, it should be sticky. Press into desired shape silicone moulds or lined loaf tin. Freeze for 15 minutes.
To make cherry layer: Place cherries & 2 tbsp water in a pot on medium heat and simmer for 5 minutes or until cherries start to break down. Mash using a fork. Add coconut, maple syrup, coconut cream and beet powder. Mix until combined.
Remove the brownie base from the freezer and add the cherry layer. Return to freezer for up to 4 hours.
Once set, remove the bites from the moulds & place on a baking mat/paper.
Melt the dark chocolate in a bowl and carefully spoon on top of each of the bites. Let the excess drizzle down the sides.
Place them back into the freezer for 1 hour to set. Store them in a container in the fridge. Enjoy!
