180g Uncle Toby’s Traditional Oats
200g Banana, Mashed
110g VPA® Kids Daily Shake
30g Cadbury Premium Dark Cocoa
3g McKenzie’s Baking Powder
50g Natvia Natural Sweetener
2 x Whole Eggs
250ml Blue Diamond Unsweetened
Vanilla Almond Milk
35ml Queen’s Sugar Free Maple Syrup
80g Cadbury Dark Chocolate Baking
Preheat your oven to 180 degrees
and line a muffin tin with 12 muffin cases.
In a food processor or blender, blitz half of your oats into a fine powder. In a large mixing bowl, combine all oats, mashed banana, VPA® kids daily shake, cocoa, baking powder and natural sweetener. Mix to combine.
In a separate bowl, combine eggs,
almond milk and maple syrup. Mix to combine.
Add wet ingredients to dry
ingredients and mix until combined. Add in choc chips and stir until
evenly distributed throughout the mixture.
Weigh total mixture and divide by
12, this will give you the total grams per muffin case. Distribute mixture
evenly into muffin cases.
Bake for 20 minutes or until a
toothpick inserted into the centre of the muffins comes out clean. Remove
from the oven and allow to cool in the tray for 5 minutes before placing
on a cooling rack.
