Ingredients

1 ½ Cup Quick Oats
¾ Cup Whole Grain Flour
1 Teaspoon Baking Powder
Pinch of Himalayan Salt
2 Teaspoon VPA Multi-Greens
1 Egg
½ Cup Pure Maple Syrup
2 Tablespoons Extra Virgin Coconut Oil
(Melted and cooled to room temperature)
1 Teaspoon Vanilla Extract
½ Cup Dark Chocolate Chips

Directions

Mix all dry ingredients in a bowl.
In another bowl, whisk together coconut oil, maple syrup and vanilla extract until you get a sticky texture. Add egg and whisk vigorously.
Add the dry ingredients to the wet ingredients and mix with a spatula until fully combined.
Gently fold in the chocolate chips.
Let the mixture sit for 10 minutes.
Use an ice cream scoop or tablespoon to scoop balls of cookie mixture and place on a baking sheet.
Arrange the cookies 2-inch apart. Slightly flatten the dough and shape cookies with the spoon.
Bake at 180℃ for 12-15 minutes until the edges of the cookies begin to brown. Don’t overbake them.
Once done, set out of the oven for a couple of minutes until it’s cooled down, then serve.
