This one-pot pasta is quick to prepare and great for meal prep. Try it today!
375g pasta – try Vetta SMART Protein Pasta (1 packet)
2 teaspoons minced garlic
1 lemon, the juice and zest
1L (4 cups) salt-reduced liquid vegetable stock
1/2 cup low-fat ricotta cheese
1/2 cup light thickened cooking cream
1/3 cup grated parmesan cheese
1 cup frozen peas
1 cup baby spinach, tightly packed
3 tablespoons mint, chopped
In a large pot add the pasta, garlic, lemon, and stock, and mix to combine.
Bring to a boil. Cover and reduce to medium-low heat and cook for 10-12 mins or until the pasta is cooked.
Turn to low heat and add ricotta, cream, parmesan and a drizzle of olive oil. Mix until creamy.
Add peas, spinach, and mint, and mix until combined. Season to taste.
Garnish with parmesan cheese and enjoy!
TIP: Add chicken to boost the protein content further.
