9 plant-based mini meringue nests
¾ cup dairy free yoghurt
1 scoop VPA® Vanilla Premium Plant Protein
½ cup fresh berries
Fresh mint and icing sugar to serve
Place the meringue nests on a large plate.
In a small bowl, combine the yoghurt and protein powder. Stir until well combined. Adjust the mixture if required. It should be nice and thick.
Dollop the protein custard onto the meringue nests. Top with berries, fresh mint and a dusting of icing sugar.
Enjoy right away.
