Loaded with Greek yogurt, chickpea flour, butternut pumpkin, and VPA® protein powder, these Savoury Protein Muffins are a great way to start your day.

1/2 butternut pumpkin
1/4 cup chickpea flour
1x scoop VPA® Whey Protein Isolate - Banana flavour
1 cup plain flour
1/4 cup almond milk
1/2 cup feta
1/2 cup Greek yoghurt
1 cup spinach
80g 97% fat free sundried tomatoes
4 large eggs
1 TSP baking powder
Preheat oven to 180deg fan forced. Dice pumpkin into small cubes and oven for 20min.
Add eggs, milk, VPA® protein, plain flour and chickpea flour into a large bowl.
Add in baking powder, feta, yoghurt, sundried tomatoes and spinach.
Once pumpkin is cooked, add into the bowl and stir until all mixed.
Serve into 10 muffin trays and cook in the oven for 30-40min.
