Ingredients
3/4 cup (107g) raw almonds or cashews
1/2 scant cup (100g) pitted dates
1-3 tablespoons coconut oil (as required)

2 scoops VPA® Chocolate WPI or WPC
1 cup (143g) raw cashews, soaked in boiling water for 1hr
8 teaspoons coconut cream
1/4 cup coconut oil, melted
2 tablespoons desiccated coconut
1/2 cup baby spinach
2 tablespoons maple syrup
1 teaspoon peppermint extract

1 scoop VPA® Collagen Pro® (optional)
100g Lindt Dark Chocolate 70%
8 teaspoons coconut oil
BASE LAYER
FILLING
TOPPING (OPTIONAL)
Directions
Blitz the base layer ingredients together in a food processor. Add coconut oil a little at a time until the mix just comes together.
Press mixture out into a lined 10x20cm tin. Place in the freezer to chill.
Meanwhile, drain the cashews and add all the filling ingredients to a blender. Blitz until smooth and adjust to taste.
Pour the filling mixture over the base and smooth out evenly. Return to the freezer.
For the topping, break up the chocolate and add it to a microwave safe bowl with the coconut oil. Heat at 30sec intervals until melted and combined.
Pour topping over the slice and freeze for 1hr, or until the filling is firm and the topping set.
