Here is another favorite. Right up there with Wagon Wheels and Golden Rough, the Mint Pattie was a huge hit growing up. This recipe has a welcomed addition, VPA® Vanilla WPI.

Ingredients

2 scoops VPA® Vanilla WPI
1½ cup Coconut
3-4 tbsp Coconut Oil
¼ cup Cashew Butter
¼ cup Maple Syrup (Sugar free)
1 tsp Peppermint Essence
50g Dark Chocolate (for coating)

Directions

In a food processor, combine all of the ingredients, keeping the dark chocolate aside.
Take about 1-2 tbsp of the mixture and shape into disks either using your hand or a mold.
Melt the dark chocolate.
Take the disks and coat them in the chocolate one by one. Setting them on a tray.
Chill for 30 minutes or until set.
