Christmas is coming and these are the perfect low calories, high protein, delicious biccies to take along to any upcoming Christmas parties you may have! Made with VPA whey protein powder.
60g almond meal
30g oat flour
40g coconut paradise WPI
1 Tsp cinnamon
1 Tsp baking soda
30g melted peanut butter
Mix all dry ingredients together. Add egg followed by peanut butter.
Using your hands, mix mixture together until ingredients are fully combined.
Add a few drops of milk (I used almond)
Using your hands, roll into eight balls. Gently flatten between your hands and place on baking tray. (Tip: Spray your hands with some olive oil before rolling, it helps with stickiness)
Press one Jaffa ball into the centre of each cookie.
Bake at 180 degrees for 10-15 minutes until golden.
