Trick-or-treat yo' self this Halloween with these Pumpkin Snickers Protein Bars. The subtle hints of pumpkin mixed with the sweet caramel sauce and crunchy peanuts make these no-bake protein bars simply irresistible. These spook-tabular pumpkin snickers protein bars are made with VPA® Vanilla Premium Plant Protein.
To make the base, mix all the dry ingredients in a bowl, then add pumpkin and water and mix until combined. Press dough into a loaf pan lined with baking paper and place in the refrigerator.
To make the caramel sauce, blend ingredients in a food processor until smooth. Remove the base from the fridge and spoon on the caramel sauce. It will be sticky, so try spread it as evenly as you can.
Top the caramel sauce with a layer peanuts and put in fridge for 1 hour. Remove from the fridge and slice into desired shape. Drizzle with melted dark chocolate and place back in the fridge for chocolate to set. Store in the refrigerator or freezer. Enjoy!
