Scrambled Eggs are a quick and healthy breakfast, add a delicious Hash and you have the perfect way to start your day. This recipe uses VPAs Egg Protein Powder to create tasty, fluffy scrambled eggs.

30g VPA® Egg Protein Powder
1 cup grated Sweet Potato
½ clove crushed Garlic
12.5g Fetta Cheese crumbled
¼ Red Onion finely diced
2 ripe Cherry Tomatoes
1 tbsp fined chopped Fresh Parsley
½ tbsp Olive Oil
Grate sweet potato and put into a bowl.
Chop onion, parsley and crush garlic.
Squeeze excess liquid out of grated sweet potato and add in onion, garlic and fetta cheese.
Add Olive Oil to fry pan and heat on a medium heat.
Add 30g (1 scoop) VPA® Egg Protein with 200ml of chilled water and shake or stir for 20 seconds or until completely dispersed.
Add Sweet Potato Mix into fry pan and cook for 10 minutes.
Move Sweet Potato Mix to one side of the pan and add Egg Protein cooking until fluffy.
In the last minute of cooking the Egg Protein add the Baby Spinach to wilt.
Plate up, sprinkle with fresh Parsley and enjoy.
