These vegan lemon & chia seed cookies are a classic flavour combo that never disappoints. Preheat the oven to 180ºC (350ºF) and line a baking tray with baking paper
In a large bowl, mix together the almond flour, baking powder, salt and chia seeds.
Then add the coconut yoghurt, lemon zest, maple syrup and lemon juice. Stir until a dough forms.
Using a 1/4 cup of mixture at a time, roll and shape the dough into cookie-shaped discs. Place the cookies on the lined bake tray. Mark criss-crosses on top if desired.
Bake for 20-22mins or until slightly crispy on the edges.
