Here is something a little different than the standard ANZAC cookie. A cream pie twist, two cookies with protein coconut cream in between. One bite of it and it'll instantly make you say "YUM" Made with VPA® WPI.

Ingredients
1 cup Coconut
1 cup Oats
½ cup Plain Flour
¼ cup Maple Syrup
¼ cup Coconut Oil

1½ scoops VPA® Coconut Paradise WPI
½ tsp Baking Soda
1 scoops VPA Coconut Paradise WPI
1 cup Coconut
Splash of water
Protein Coconut Cream
Directions
Preheat the oven to 160º and line a baking tray.
In a food processor combine all biscuit ingredients.
Take about 2 tbsp of mixture and press on to the tray, Repeat.
Bake for 10 minutes.
Make the cream by combining protein powder, coconut and water.
Take about a tbsp of the cream and press between 2 biscuits.
