This is cheeky twist on the standard fruit and nut cookie. Here we have the Cranberry nut Cookie, packed with Almonds and Cranberries as a natural sweetener. Made with VPA's WPI in Salted Caramel.
1 cup Plain Flour
1 cup Coconut Flour
2 scoops VPA Salted Caramel WPI
1/2 cup Coconut Sugar
1 tsp Baking Soda
1 cup Nut Butter
1 cup Cranberries
1/2 cup Almonds
Preheat the oven to 160° and line a baking tray.
In a large mixing bowl or food processor combine all ingredients. (if using food processor, run in reverse or on low so as to not chop the berries and nuts)
Take bits of mixture and roll into a ball before pressing onto the tray.
Bake for approximately 10 minutes or until desired texture is achieved. (10 for a softer cookie).
