Level up your lamington game with this bite size coconut protein lamington recipe. I guarantee that you will taste bliss with every bite! It is a perfect snack or dessert to serve for Australia day or to be enjoyed all year round with friends and family. Made with VPA's WPI.

60g raw almonds
16g quick oats (blended until fine)
1/3 cup shredded coconut
30g protein powder
1 tbsp macadamia oil
2 tsp water
1 tsp vanilla essence
2 tbsp sugar free maple syrup
1 tbsp macadamia oil
1 tbsp chocolate protein powder or cacao
1 tbsp tahini
Blend all dry ingredients in a blender. Add wet ingredients and blend again until all ingredients are combined.
Pour mixture into a bowl. Using the heat of your hands gently mix and roll into 6 balls. Refrigerate for 10 minutes.
Chocolate dipping sauce: In a small bowl, whisk macadamia oil, cacao or protein powder and tahini.
Gently dip each ball into chocolate sauce and roll in coconut.
Refrigerate for 30-60 mins until chocolate has hardened.
