Choose these delightful plant-based Strawberry Protein Blondies this Valentine's Day. Bursting with sweet strawberries and decadent white chocolate, these buttery blondies will be love at first bite.

1 cup wholewheat spelt flour
1/4cup VPA® Vanilla Premium Plant Protein powder
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/2 cup cashew butter, room temp
3/4 cup coconut sugar
1/4 cup + 1 tbsp apple sauce
1 1/2 tsp vanilla essence
1 cup strawberries, chopped + extra slices for the top (optional)
1/2 cup white chocolate bites + extra for the top
Preheat oven to 180°C and line an 8 x 8-inch square pan with baking paper.
In a small bowl, stir together the flour, plant protein powder, baking powder, cinnamon and salt. Set aside.
In a large bowl, add the cashew butter, coconut sugar, apple sauce and vanilla & beat together with an electric mixer. Fold in the dry ingredients to the wet ingredients and stir until just combined. Carefully fold in the strawberries and white chocolate.
Spoon the batter into the baking pan and smooth the top. Add more strawberry slices on top.
Bake for 30 minutes or until a toothpick comes out clean. Remove from the oven and sprinkle extra white chocolate bites on top then bake for another 1-3 minutes until chocolate is melted. Place the pan on a wire rack and allow blondies to cool completely before cutting.
Use GF flour for gluten free version.
